Ingredients:

This made 5 reasonable portions (1cup/250ml/8oz each)

  • Raspseed oil (or half/half with butter)
  • 2 medium onions, finely cut
  • 3 cloves garlic, micro planned / garlic crusher
  • 3cm ginger, grated
  • 1tsb garam masala
  • 1tsb turmeric
  • 1tsb paprica
  • 1tsb chilli powder
  • 200g tomato passata
  • Salt
  • Lemon juice
  • 1Kg Chicken thighs, boned, skinned and cut into bit size pieces
  • 100ml double cream

Method:

Sauté the onions in oil for 5 mins

Add the Garlic and Ginger and continue to cook for a couple of minutes

Add the spices and wait another couple of minutes

Add the tomato passata, stir throughly and simmer for 15-20 mins.

Taste and adjust as needs. Mine needs a little more salt and lemon juice.

Add the chicken and cook for 15mins, stiring occasionally.

Add the double cream, stir well and cook for another 5 minutes.

Serve with Basmati rice / Naan with a sprikling of parsely or coriander depending on your taste.
