Ingredients:

 

Chicken

500g chicken thighs boned, skinned and cubed
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons cornstarch

Vegies

2 large eggs, lightly beaten

1 cup (uncooked) rice, cooked & chilled
1 cup frozen peas and carrots, thawed
2 green onions, chopped

2 tablespoons soy sauce
1 tablespoon sesame oil

Other stuff

Bang Bang sauce

  • 3 tbsp mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha

Garnish: sesame seeds and green onions

 

Method:

Sweet, spicy, crispy chicken meets sizzling veggies and golden fried rice in one epic pan dinner!
This dish brings all the flavor you crave — tender bites of chicken coated in creamy Bang Bang sauce, tossed with colorful veggies and perfectly fried rice. It’s fast, fiery, and guaranteed to become a weeknight favorite.

In a large bowl, toss chicken cubes with paprika, garlic powder, salt, black pepper, and cornstarch until each piece is evenly coated.

Cook the Chicken:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes, or until browned and cooked through. Remove and set aside.
Scramble the Eggs:
In the same pan, melt butter and pour in the beaten eggs. Stir gently until just set, then move them to one side of the pan.
Add Rice and Veggies:
Add chilled rice and the peas and carrots. Stir-fry for 3–4 minutes, breaking up any clumps and mixing everything together.
Combine and Flavor:
Return the cooked chicken to the pan. Pour in soy sauce, sesame oil, and half of the Bang Bang sauce. Stir well so the flavors coat every bite.
Add the Finishing Touch:
Drizzle the remaining Bang Bang sauce on top, then sprinkle with chopped green onions and sesame seeds for a little crunch and color.
Serve and Enjoy:
Spoon into bowls and serve hot — every bite is sweet, spicy, and completely irresistible!
