Ingredients:

  • 3 salmon fillets (about 6 oz each)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (in oil), chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1 tbsp fresh parsley, chopped

Method:

1️⃣ Sear the salmon:

Season salmon fillets with salt and black pepper.
In a large skillet, heat olive oil over medium-high heat.
Sear salmon for 4 mins per side until golden and cooked to your liking. Remove and set aside.

2️⃣ Make the creamy sauce:

In the same skillet, add minced garlic and cook for 1 min.
Add sun-dried tomatoes and sauté for another minute.
Stir in baby spinach until wilted.

3️⃣ Finish the sauce:

Pour in heavy cream and add parmesan cheese.
Season with Italian seasoning, salt, and pepper.
Simmer for 2-3 mins until the sauce thickens slightly.

4️⃣ Return the salmon:

Place the seared salmon back in the skillet.
Spoon the creamy sauce over the salmon to coat.
Cook for an additional 2 mins to warm everything through.

5️⃣ Serve:

Sprinkle with fresh chopped parsley and enjoy with crusty bread or rice!
