Broccoli with Anchovy, Chilli & Garlic

Ingredients:

  • 1 clove of garlic
  • 30g good salted anchovy fillets
  • 1 small red chilli (I used green) deseeded and finally chopped
  • 1  tsp thyme leaves
  • 2 basil leaves, finely shredded
  • 1tsp Dijon mistard (I used mutard de merrr)
  • 1tsp red wine vinegar (I used what ever I had)
  • 60ml extra virgin olive oil
  • 300g tender stem broccoli

Method:

Make the dressing:-

  1. Pound the gralic in a pestle and mortar, then add anchovies and grind to a paste.
  2. Add chopped chilli and herbs and continue grinding.
  3. Finally add the mustard, vinegar and olive oil and miz to make a dressing.

Cook the broccoli in boiling seasoned water until al dente, 2-3 minutes

Drizzle the dress over the top and serve
